3 salmon portions, thawed
salt and pepper to taste
1 Tbsp. olive oil
1/2 cup green onions, sliced
2 Tbs. orange juice concentrate
1 cup orange segments cut into 1/2 in pieces
2 Tbs. chopped fresh parsley
1/2 tsp. salt
1/3 tsp black pepper
Directions for Salsa
- Saute' onions in olive oil until soft. Add remaining ingredients
- Continue to cook until orange segments are warmed through
- Remove from heat and add chopped parsley
Directions for Salmon
Grill it:
- Spray or rub fish with oil. Grill fillets for approximately 3-4 minutes on each side.
Pan Sear:
- Place small amount of oil in pan and heat until very hot. Cook salmon until firm to touch, about 3-4 minutes on each side.
