SALMON WITH ORANGE SALSA

We know what you are thinking. Orange Salsa Salmon... sounds questionable right? Wrong. The sweet taste from the orange made it so incredibly good. With few ingredients and easy instructions it was a quick and easy make and our favorite part. Its healthy, while tasting like it was made at our favorite restaurant. 

Ingredients
3 salmon portions, thawed
salt and pepper to taste
1 Tbsp. olive oil
1/2 cup green onions, sliced
2 Tbs. orange juice concentrate
1 cup orange segments cut into 1/2 in pieces
2 Tbs. chopped fresh parsley
1/2 tsp. salt
1/3 tsp black pepper





Directions for Salsa
  • Saute' onions in olive oil until soft. Add remaining ingredients
  • Continue to cook until orange segments are warmed through
  • Remove from heat and add chopped parsley

Directions for Salmon

Grill it:
  • Spray or rub fish with oil. Grill fillets for approximately 3-4 minutes on each side.

Pan Sear:
  • Place small amount of oil in pan and heat until very hot. Cook salmon until firm to touch, about 3-4 minutes on each side.
Plate it and enjoy. We did ours in a pan, but grilled would be just as good. Maybe better. While we would love to take credit for this delicious recipe we simply found it on the bag of salmon we purchased. *Premium Atlantic Salmon Fillets. So, to whomever their chef is.... we love it!
